BEST EVER Crispy chick pea, halloumi and kale salad recipe

Even kale haters love this kale salad with the addition of crispy chickpeas and hummus!

We all know that legumes are amazing for our gut microbiome, and the cruciferous kale is the perfect fiber for hormone detoxification, so this is a gut-friendly, hormone-helping delicious meal!



Ingredients


1 bunch of Kale

1 tin of chickpeas

1 block of halloumi

2 red capsicums, diced

1/2 butternut pumpkin, roasted

1 tsp paprika

1 tsp cumin

1 tsp coriander

1/2 tsp salt

1 tub of hummus


Directions

  1. Cut the pumpkin into 2cm pieces and add to a tray with the drained chickpeas. Drizzle with olive oil and then add the salt & spices, massaging them into the chickpeas and pumpkin till they are covered generously.

  2. Roast in the oven for 40minutes or until the chickpeas are crispy

  3. Put the kale leaves into a large salad bowl and massage with olive oil.

  4. Next, add the diced capsicums into the bowl.

  5. Slice the halloumi into 1cm thick pieces and fry in a saucepan. Add to the bowl with the kale and capsicums

  6. Serve the kale and capsicum on a plate, and add the roasted pumpkin and chickpeas and a large dollop of hummus.
